Menus/Controls: rearrange some options

Browse source 
- Rename RECORD LOSSLESS to RECORD GIF
- Move SHOW RANKINGS above OPEN CHAT
- Move OPEN CONSOLE below LUA/C
- Rename EXTRA header to TEST AND CONFIRM
